Irish Potato and Kale Soup

1 diced onion
3 cloves chopped garlic
5 large potatoes
2 Tablespoons of olive oil
6 small kale leaves
2 cups of cut broccoli
3 sliced spring onions
1 cup roughly chopped parsley
salt and black pepper
1/2 cup snipped chives
Heat oil, add onion and garlic and cook 3 minutes
Add diced potatoes and sufficient water to cover potatoes. Cook gently until potatoes are tender
Add remaining ingredients and cook for a few minutes until vegetables are just tender
Serve as is or add a spoonful of butter or cream or grated pecorino cheese.
