LEEK and BROCCOLI SOUP

Ingredients
1 leek
2 tablespoons olive oil
2 cloves garlic
3 diced potatoes
4 cups water
4 cups broccoli pieces
salt and pepper to taste
1 cup chopped parsley

Method
Heat oil, add leek and garlic and cook for 5 minutes
Add potatoes and water and simmer until potatoes are tender
Add broccoli and salt and pepper and cook until broccoli is tender
Stir in parsley and serve.
